Soften the goat cheese with a mixer, pipe the goat cheese into the pitted, dried dates. Bake bacon until it's halfway cooked. Wrap dates with the bacon strips and use a toothpick to secure. Finish baking until bacon is fully cooked.
These are seriously, rediculously off the fucking chain.

go spanish style and substitute the bacon for pancetta (next level bacon) and sub the goat cheese for a nice aged machego, and add a small mint leaf. reduce some basalmic vinegar by half and drizzle over them.
